Your radiator looks like it may be piped like radiator 12/61 not radiator 6/61 as you indicated. If I am correct, I do not see a problem with capping off the supply and the return.
On the other hand, the supply pipe for radiator 6/61 could only be capped off above the tee shown in the drawing. If you were to cap off the entire horizontal pipe, you would not allow steam to reach radiator 7/46.
In other words, you do not want to cap off a shared steam supply or a shared steam return.

What is the hot water demand in gpm, that is how you size the piping?
What temperature do you maintain?
Tankless water heaters are very common in hotels now, for efficiency and continuous dhw
If you go with a stainless tank or tankless you want to test for chlorides
Is there a laundry on property ?
Softening the hot water helps fixtures and soap consumption, also

@Kaos makes a good point. I made the mistake of installing a Viessmann Vitodens 200-W with a low-loss header on a system with non-barrier tubing in 2016. The boiler has been working fine, but the low-loss header developed a nice hole in a matter of months.
Check your Radiantec tubing to see if it has an oxygen barrier.

Hard to say without watching the video. As much as I love an 18 gauge p-trap, the cheap, plastic ones go together much easier and seem to last longer.

Sometimes the flexibility of the pipe is used to take up expansion movement, as in expansion loops (big U bends separating long sections of straight pipe). It isn't really all that difficult to figure out how long the legs of the U have to be to absorb a given amount of expansion or contraction at a reasonable level of stress in the piping.
How to cope with expansion is an interesting little corner of mechanical or civil engineering…

My beef is i don't see how a threaded joint that relies on the steel deforming can move back and forth and not start leaking.
Even after 100 years.
I think the pipes act like leaf springs and that's the extent of it.

one issue with stainless bolts is there is no stretch or give. Tell snap before you notice any movement.
grade 5 bolts are fine.
Never seize is your friend on the gasket and bolts.
After a few weeks tighten the bolts again.

I didn't realize you had the R7284 primary control. there is a feature that you can use to bypass the 15 second trial for ignition to prime the pump and to do the CadCell test. It is called "pump prime"
Pump Priming Cycle
To facilitate purging air from the oil lines and filters, the R7284 can be placed in a purge routine by pressing and releasing the up arrow button during the Trial ForIgnition. In the advanced interface “PUMP PRIME” is displayed on the display along with the time left on the Trial forIgnition (TFI). Pressing the up arrow button adds a minute to the TFI time for a maximum of 10 additional minutes (press the up arrow button 10 times). Pressing the down arrow button subtracts a minute from the TFI time.
YOU MUST ONLY USE THIS FOR TESTING WHEN YOU KNOW FOR SURE THAT THERE IS A FLAME IN THE COMBUSTION CHAMBER. You do not want to run the burner motor and fuel pump for more that 15 seconds if there is no flame.
If you remove the yellow wires from the R7284U control and connect them to a separate ohm meter (not the one included in the R7284U) you will be able to diagnose the flame signal from the yellow wire, thru the Eye and back to the meter from the other yellow wire. You will have 5 minutes to make sure the ohm meter is connected properly and watch the ohm reading as the flame is operating in the combustion chamber.
There are 2 possibilities when the flame is present
- the C554 cad cell circuit is defective (eye, eye adaptor, yellow wires, spade connectors, mounting bracket)
- the R7284U control is defective
In order to rule out the control (the more expensive repair) you need to do the test as I have described above and illustrated in the comment above, using a separate meter. If you can not get an ohm reading of less than 1000 ohms, then replace the C554A 1463 complete assembly with a new one. If you do get the expected Ohm reading below 1000, then replace the R7284U 1004 control.

@Alan (California Radiant) Forbes so, if I understand this correctly, the pool is heated with a radiant copper loop on the sides of the pool? In addition, this radiant system and boiler have been in operation since the 1950's? That's pretty impressive!
