Copper or black pipe. You've been told and it has been explained. If you want to use plastic, you might as well use garden hose. That will be cheap and last a few years too.
Black is cheaper than copper, but with the cost of fittings and labor will be more expensive. Black pipe will last 75 years; copper maybe 75 - 100.
Most residential customers care more about their counter tops than their heating system. A conscientious pre-purchase inspection might have netted a handsome credit for the leaky returns. If it was missed b y the "inspector," you may have some recourse.
Plastic pipe will fall apart quickly and get you or your plumber called a hack.

If you buy any parts on your own, if they need warranty, then you need to deal with that
If the plumber supplies and installs all the pieces parts and labor warranty are with him.
There should be output charts for both size tanks, maybe with the larger tank you could run the boiler a bit lower temperature?
Its hard for the manufacturer or plumber to know exactly how much dhw you need or want.
I have never had a customer complain about too much hot water 🤭

look like bio heating oil receives a lot if federal and state tax dollars for incentives. What about those that do not heat with oil? Are they paying?

How many stories? Make sure you don't exceed the vent pipe length, also make sure that it is properly supported and pitched for condensate removal. You don't want the weight of 30+ feet of PVC pushing down on the horizontal connector to the boiler vent termination. That may cause the horizontal to fall or droop over time and make the pipe unable to drain to the boiler, then eventually fill up and block the exhaust.

In MA if I go out the side of the house I will need to include a sign on the side of the house, and hardwired C0-2 detectors on each floor of the house (costly add on)…. maybe its cheaper to drop the pipe down the chimney then.

CPVC isn't really rated for the temp if steam ends up in the wet return for some reason. Copper is fine in the wet return because steam isn't supposed to be in the wet return so the higher thermal conductivity that makes copper unsuitable for steam piping isn't an issue below the water line.

We're on the same 1:1 deal that @ethicalpaul is talking about. Works out well enough at least so far. Who knows what will come down the road — out power company is happy enough with the deal, but legislators are unpredictable, never mind the public utilities commission…
