You better have a very large house if they think you need 125-150k btu. Or no insulation. Do your own heat loss before doing anything. As an example, I put a 175 k btu in an older six plex apartment building, and it is also feeding a 100 gallon water tank. Do not oversize your boiler!

I think you just cleared up some of my confusion in my response to @pedmec. Basically there's no difference in terms of the cold start of a boiler between the Turbomax and the SuperStor. Is that correct?

Some indirect brands are bumping up the coil sizes to work better with lower SWT, especially when paired with condensing boilers. Maybe that is the case with the ultra max?
If the 40 has served you well, either of those should perform as well or better for DHW capacity.

that is the best option as it is hard to “bump” it open, or break off like the previous wing type

i think that is going to happen sooner or later where you have to rip the wall open to fix something if you bury a toiler rank in a wall.

A photo and the part number of the valve or the model number of the heater please. I have found that most gas valves are not field repairable. The manufacturer does not recommend disassembly of gas valves. You may be better off with a replacement that works in a similar way, can be set to the same specifications and has not been taken apart.
As a Professional that likes to tinker and take things apart to see how they work, I have never in my 40+ years of hands on repair work, taken a gas valve apart and replaced any internal part, then put it back in service in someones home. I just don't want that kind of liability.
