I hope I’m wrong but those firematic valves, isn’t the stem supposed to be vertical?

Technician isn't too smart. You take the wheel (handle) off the firomatic valve and tap the stem and it should close.
The other firomatic will protect you in case of fire.
If you want you could do as @HydronicMike said and cut or disconnect the oil lines at the top of the tank. This will break the syphon and you can have the valve replaced with only the small amount of oil in the lines to deal with.
Why you would need a Tiger Loop with the tanks that high above the burner is a mystery to me.

They are spring loaded if that is the question. Pretty strong spring.

Firomatic valve are installed at the oil tank (for an indoor tank) , where the oil line enters the building for an outdoor or underground tank and at the oil burner.
IMHO the one at the filter does not need to be a firomatic valve it could be a ball valve as it is only needed to service the filter. The one near the tiger loop will suffice as the one needed at the burner.
As I said above if the handle was taken off the firomatic above the filter (it screws right off) tapping the valve stem slightly should close the valve. Screwing the handle back on will open the valve.
Changing the valve with the tank i story above the filter if a dumb idea in my opinion. They could easily cut the oil line near the top of the tank and splice it back together after changing the valve.

I'll only use Mueller due to all of the issues with other brands and pinholes etc.
Brazing the extension is fine as long as you flow nitrogen.

Nothing wrong with brazing its been done for years. You don't have to buy a "line set".
Just go to an AC & Refrigeration supply house and but AC & R tubing. It comes in 50 foot coils braze it and your done. By insulation and slide it on. No big deal.
The first MiniSplits that came out were all brazed.
If most techs new how to braze and use nitrogen or how to flare thing would be ok. Or use the press fittings that everyone but me loves.

Mitisubishi frowns upon brazing there mini line sets.

you can whittle the pex away slowly until you get almost to the brass to get it off the fitting. be careful because there is a ridge in the fitting that sort of sticks out. I wouldn't be super worried about how hot the other end of the fitting gets if you concentrate on the tubing, since the tubing is nonconductive the heat won't transfer much to the fitting if you concentrate on the tubing and just get it hot enough to slip off.
btw, painting the tubing would have shielded it from uv.

The Buderus DHW tank is different from any Direct fire stand alone water tank. I have seen gas fired water heater with a 6 year warranty last 7 years before the tank starts to leak. just long enough for the warranty to be over. I have also owned that exact tank you have. It lasted 28 years in my own home. I don't remember dealing with the anode rod in the 28 years of ownership. Now everybody's water quality is different, so I can't predict what will happen with your Buderus tank. I just believe that you can do the Anode Rod Replacement and you should be fine.
