@Alan (California Radiant) Forbes so, if I understand this correctly, the pool is heated with a radiant copper loop on the sides of the pool? In addition, this radiant system and boiler have been in operation since the 1950's? That's pretty impressive!

Use a 3 elbow swing. Have the pipe come in past the centerline of the tapping put a 90 on the pipe then a nipple and another 90 then a nipple and a 90 down into the tank. So you come in past the centerline turn then turn and go back to the tapping. I would arrange the fittings so they tighten when the tank is filled.
I am not sure Roth knows what they want.
If the tank settles as it is filled and they are worried about a gap why do they have pipe hangers shown in the diagram??
Seems to me the pipes need to be unsupported so they will float with the tank or you will have a gap. Swing joints can't swing when hung.

Radiantec is the bane of Vermont and all of their clients who "fall victim". I have encountered too many of those systems. You did the biggest correction by adding a Viessmann boiler, transfer plates and insulating below the stapled-up 7/8 tubing. It might help if you insulated the 1" "long manifolds" so that more heat could get to the indiv. 7/8" loops. The floor sections with 1" manifold must be "plenty warm"! It seems like your challenge is to balance the flow, set the Viessmann boiler program properly and let IT decide the water temperature—not the indiviual mixing valves. Something close to constant flow would be best.

what type of boiler? What was the SwT with the valve closed, and delta?
Was the system under load ? Melting snow during the adjustment?
With the bypass closed the boiler must have been seeing cool return? 30 degrees or lower?

Hi, Before doing any boiler room work, I'd be measuring shower flow rates and water pressures over at least a 24 hour period. If pressures fluctuate, I'd be looking at pressure compensating showerheads. Neoperl makes the innards for showerheads. I'd be installing 1.5 gpm heads if what you have now is larger. Once that work is done, I'd be metering hot water usage so yo know just what the demand really is. With that info, you can work in the boiler room and size the equipment to the measured need. You might find a lot of savings in equipment costs once the hot water demand is controlled. I know I'm not answering your questions directly, but this sequence of doing the work gives you the best chance of success.

The riser coming out of the vise needs to go up to just short of the hole in the wall for the pipe going outside. You need a little pitch from outside to the tank but not that much. By exagerating the pitch your losing some of the swing.
The pipe (both fill and vent) only need enough pitch so they will not hold oil
