You don't use a manometer to set these gas valves. You need a combustion analyzer. You can use your manometer to check incoming gas pressure to the gas valve to make sure you're not losing gas pressure. I would not recommend any adjustment without analyzer.

electric tanks seem to last longer than gas fired, since there is no fire under the tank.
It us tough to guesstimate dhw water usage, it varies widely from family to family Rarely do you hear someone complain about too much hot water
All tanks now have good insulation to meet the energy standard, most are spray foamed no more thin fiberglass wraps

You mention there was some repiping done to a "two pipe system" and now it's a "one pipe system". It's doubtful that this was done and if it was, it's even more doubtful that it was done correctly.
The problems you describe typically result from a poorly piped boiler.
If you post some photos of the pipes above the boiler,plenty of folks here can offer advice and assessment.

Been there, you need to power the nest with full-time 24 V, which would likely require the use of a relay.
Or, run a 4 wire, two of the wires are the power and common, two of the wires are your call for heat.( r and w) . No relay needed in this circumstance.

I believe those varivalves are very fast even in their slowest setting so they are likely part of your problem. the maid o mist with the set of different size orifices might be a better choice. also harder to tamper with. could also use a few TRVs in a few strategic areas but you have to have it mostly in balance already to use those on 1 pipe steam and you can't use them everywhere, just strategically in areas with largely varying loads.

Northwest Missouri? Well… that is sort of out in the weeds so far as steam! All is not lost, however. As someone said, check back on the Wall often; that's where the experts hang out and we will help you.
As someone on the Wall said a few minutes ago, the process of selecting a boiler size (and, ultimately, a boiler) isn't hard at all. What you need to do is to determine the capacity of the existing radiation — called "EDR". If you take some pictures of your radiators, and measurements, we can help you determine what their capacity is. Then the proper boiler size is simply the sum of those capacities. That's all there is to it. No fancy formulae, no measuring of the building, nothing like that.

Which ever boiler you chose to replace your current one, you should also pick the company that will install it best, and how well they will service said replacement.
