If you must have something accessible, you can do something similar to this with some fancier wood nailed to the bottom of the joists as DIY I-joist flange. If the sheets are long enough, there won't be any seams to finish, just paint the whole thing.

Even I use 20 minute often.
I currently have a bag of 90 because I'm doing multiple ceilings and wanted time to work but I probably should've went 45.
When it's heavy 90 minute takes a good 2 hours before you can work on it again. At least that's my experience but I'm far far far from an expert. I can make things pretty but it takes me time.

the finish coat plaster they use is mostly plaster of paris and sets fast.
