what’s the best way to check a gas valve on a boiler or furnace etc to see if it’s bad or good? I like the multi meter

turn the heat up, see if the unit fires🤔
I don’t know of any way to do a stress test to determine the life left, if that is what you have in mind.
If it doesn’t fire at all, then you need to use a meter and understand the wiring diagrams included inside most manuals, or the jacket itself.

Set it to measure resistance (ohms) and check the terminals. If there's continuity, the valve is likely good; if not, it could be defective.
