do you have pics of this install? i would check for proper pitch....make sure its not back pitched.....is there an open tee behind the traps that could be sucking in air and holding water from draining? is your coil clean? whats your pressures? superheat subcooling? temperature split ? or piston? could be freezing the evaporator coil? is this a new installation sometimes manufactures require a splash guard to be installed depending on application. stupid question but did you blow out the drain? or check for a cracked pan?

Why two drain lines? Each w/ its own trap? What brand of AHU has a 1" drain for 5T unit? Are both drains from the AHU at the same height? If at diff "heights" then only one trap will be "primed" while the other remains dry, allowing air to get sucked in or blown out. What do you mean by "unit turns into a rain forest?

The above unit looks like the one our tech saw being taken down Jim Irsay's driveway to his HOUSE. The wealthy Mr. Irsay owns the Indianapolis Colts.

But 5 ton and 50 ton are small potatoes. How about this baby...

Restricted returns, plugged filters, dirty coil?? causing to much suction and causing the water to hang up in the unit. Or traps are not deep enough

    1) where is the water going?
    2) why is it not going through the ample drains?

I have seen an A coil tray clogged with debris causing it to overflow down on the furnace below. Eventually the A coil failed from being soaked in water, and the tray completely corroded through. The condensation just went down through the furnace

    ON A SIDE NOTE

Jim Irsay's dad, Bob Irsay, snuck the Baltimore Colts out of town one night. Whenever someone in Baltimore does something sneaky we call it "Pulling an Irsay" referring to Bob.

"On March 29, 1984, the Colts sneaked out of Baltimore on a snowy night and left a football town in mourning. Grown men and women cried. People drove around the city the next morning with their headlights on as if somebody died."

It was kind of a big deal to Baltimore.
Now Indianapolis is stuck with Jim

Maybe Baltimore is really better off.

Velocity too high across the coil? Had an air handler (actually 4, about identical) with no return duct & short, spacious supply duct. Total static was around nothin', the standard drive kit blew the condensation right off the coil & into the box. There wasn't even any water in the pan! The fix was a low static kit, haven't heard back since.

So it was blowing condensation right off the coil?? That would answer the questions!
