Not reaching setpoint

I'm a complete ignorant about this system plus a new firsthomeowner in interior Alaska. Just a bad combination of circumstances altogether! The heating seemed to be working fine during fall but now that the temperatures are dropping i began to see the heating was not reaching the setpoint in the thermostat with each cold snap. Even though the pump and boiler are running.
My husband changed some of the settings (including lowering the mixing minimum temperature) in the pump but I think he was wrong in doing so.
I'm about to start checking online training videos on this system, but thought I'd check if this is a fairly simple thing to change. I'm almost certain it may be just a settings issue, but like I said I know nothing about this. Contractor are difficult to schedule to come check the system out so here I am.
If anyone has experience with this and could help. Any help is appreciated, including sending references or manuals. Thanks.

Do you have the manual for that gadget? Or the make and model number so I can see if I can find it? I suspect that the mixed temperature needs to be higher, but I'd love to have the manual to see — and to see what, besides the gadget if anything, controls it.

It looks like a pretty new install. Do you know if it ever has performed well during one of your winters or is this its debut?

@tacampa You have a Taco XPB-1. It could be just a setting that needs to be changed.

I did, but the agent needed to know specifics, like which sensors do I have installed, and since I know nothing about it, she said she couldn't help. I found it weird, but I guess there are many kinds of arrangements. I only know there's a temperature sensor outside a sensor on the pipe coming from the boiler and sensors going out to the tube's. If you happen to know the name of my type of system that could be useful so I can Google further about it.

It's 2016, and heating things got checked before selling so it should have been fine. And just before cold snap it was performing fine.

That's the manual, but I couldn't figure it out.

Does the boiler also provide domestic hot water? I've never seen a Toyotomi in real life so I'm not sure if there's a tankless coil in there. I do see a mixing on the left side of the boiler. It it make sense that the boiler runs for domestic hot water, but not providing heat. The heat loops could be air locked, rather than there being an issue with the mixing block.
