All I need is something that sends 120V or zero volts depending on whether the circuit is closed or open, like a light switch.

+1 for the Honeywells, although I would expect the others to work fine too. Pay attention to the current. Honeywell has a few flavors, switching current being part of the mix. The heat/cool stat is low current on the cooling side—it expects to be switching a contactor—but the heating leg will switch it's load directly.
Two stage will allow you to be clever if you want, but if not pay attention to which set of contacts you use, there's an offset between them.
