Removing radiators from hot water boiler system

We have a house built in the 1870’s. It has a boiler and radiators. We love the heat provided by our system. We would love to enlarge the kitchen and one option would involve removing 2 radiators from the gravity fed system. Can I get thoughts on how that might affect the entire system. And what other heat source we could use to provide heat for the newer kitchen area. Btw, some of the radiators have already been removed from the basement area before we bought the house. They were ceiling radiators.

Is the system still gravity fed or pumped? If it's still gravity, you need to be careful about removing any more rad's; you may throw it out of balance.
Panel rad's or tow kick heaters may be an option if it's pumped, but they will need to be on their own loop and circulator and don't expect perfect performance.
You've got the best heat emitters now with CI rad's (except for radiant floors). I'd recommend reworking your remodeling plans around them instead of trying to replace them.Bob Boan
