How often do you want to change the water temperature and why?

I don't see any reason to manually adjust the water temperature setting on a limit control unless it is for lowering the limit when the outdoor temperature is mild and you don't need 180° in your radiators. Then when it is very cold outside you do need 180° water in your radiators.

Someone already invented a control that will do that for you. If that is what you are looking for, just ask me about "outdoor reset" (ODR).

To answer your query, there are commercially available remote control systems that can adjust just about every parameter of any HVAC system, be it room temperature from zone to zone, water temperature, steam pressure, and all sorts of things. you might be looking at about $40,000 for a small Building Management System (BMS) for say a 10,000 sq ft facility. How large of a building are you asking about?

Many modern mod/cons have built in DHW controls using sensors, and have built in wifi connectivity. Every mod/con I sell is capable of remote control of DHW setpoint.

I think the issue you would run into with an external 3rd party wifi aquastat device is cost. You would need a controller that was capable of reading a sensor (as a bulb type aquastat sensor would limit where this bulky control could fit) it would need to be able to adjust the setpoint, connect to wifi, have an app built for its use, customers would want scheduling, and it would need to have a dry contact out, it would also need to be able to be controlled manually. A crafty tech could probably build this with a rough app for not much money. I imagine retail you would be looking at $1k+ for something that only a very small market of people would even be eligible for.

Honeywell (now Resideo) has a L7224U boiler aquastat that has an EnviroCOM® communication protocol that can connect to other EnviroCOM® enabled devices that can be accessed remotely over the internet. This is the closest thing to a residential version of what you are asking for. However, it does not have the capability to adjust the limit temperature remotely, only monitor the temperature thru systems like Total Comfort® or RedLINK® that communicates over the internet. For today, there is no stand alone WiFi aquastat available as of now.

What are you trying to control?

Depending on what you are trying to control..…have you looked at the Meross Smart Temperature controller. I would not recommend powering your boiler controls from this. But in theory it can be used on a plug in circulator. You will have to make sure their probe's temp range is within your working specs. And with a third party switch/relay (dry contact switch) you can use it to control much more. https://www.meross.com/en-gc/smart-thermostat/smart-socket-thermostat/145

I have purchased this one but have yet to test it out. https://a.co/d/0bzCfnuR
