Why are there 3 columns? (1oz, 2oz, 3oz) ?

They show the air flow at each of those three pressures. Since your system runs at different pressures at different times, the value of the chart is primarily to see relative flow rates between different vents, as opposed to actually being able to specify a specific vent to use (in my opinion).
