There shouldn't be — but it is quite possible that there could be interferences.

I know if you open up a bag of ground coffee the CO goes crazy. I will check with my medical expert at John Hopkins to see if he has ever checked mold.

Depending upon your sensor, it may be responding to VOC's and not CO specifically. Also, if you have mold, you could have deteriorated conditions in your combustion equipment that results in CO production. Check each combustion appliance separately to ensure they're operating properly. Measure your indoor Rh% and get it under control.
