Oil fired boiler replacement
We have an old 4 section Weil McLain boiler. There are three zones, each with a wax valve. Each zone valve can start the pump. The boiler cycles to maintain a minimum return water temperature. We would like to replace the boiler, but would prefer to fire the boiler (and pump) only upon a call for heat in one of the zones. Any recommendations for a simple way to do this? Thanks!

Why do you want to replace the boiler? Is there a problem of some kind with it?
As to changing the control logic so that it only fires when a zone is calling — that's just a wiring change. Let us know what the actual valves are (make) and what controls you have now, and we may be able to give you the changes needed. Takes about an hour, and usually no parts required.

If the WM boiler is not leaking, then just update the control with this

It costs a lot less than a new boiler
If the old WM looks like it is on its last legs and the old tankless coil flange bolts are rusting away and the burner is an ancient relic, then get any new boiler that comes equipped with a modern control system.
If it is an old relic that is on its last legs like this with rust covering all the water pipe connections then replace the boiler with any new boiler that has a modern control
If it is well maintained like this then just change the control.

Can you explain a little more? You want one thermostat to operate all three zones, or you want to only use one zone, leaving the other two disconnected or non operable?
Can you show pics?
Is the domestic hot water involved, or is there a separate appliance for it?
