Completely out of the box smoker build

I need to smoke massive quantities of meat and vegetables for my business and have been unable to find a contract smoker to duplicate my product. The jumbo smoker I envision is fabricated out of a 16 to 20 ft used reefer box with or without Refrigeration, Refrigeration would be nice but probably cost prohibitive. I will heat the Box with 100,000 BTU (?) gas-fired cast iron boiler and crank it to 200 and feed two Modine downdraft heat exchangers in the ceiling of the box. The controller I currently use has a external fan option that has way too many bells and whistles. Temp in the Box would be max 190 ° f. I think the Fireboard FBX2 output could be configured for 12 volt 18 VA output which I could feed a 12 to 24 volt converter to fire the boiler and possibly two or three Taco circulating pump zone valves. I welcome your comments!

    NO, NO, and NO;

    A surplus insulated reefer will go up in smoke like Cheech Marin
    and Tommy Chong in "High Anxiety" and the local fire department
    will never be your friend.

    What are you using for wood chips or firewood???????????????????????

    There are people that build large smokers with stationary or rotating
    racks with fireboxes under the racks.

    A blow down smoker would not work as the useable smoke rises up
    through the meat and vegetables slowly regulated by the both the
    manual draft control in the chimney and the adjustable primary air
    inlets in the ash pit.

    you can find a box with Fiborglass insulation that MAY work. Todays urethane insulation will off gas at that temperature. 

    Why does it even have to be insulated?

    Since when do smokers need an external heat source? The whole concept of smoking foods utilizes the heat from the burning wood. Visit any down south BBQ joint and check out their smoke wagon.
