Need help on my Viessmann 100-W, B1HE/B1KE Combi putting out too much heat

Morning all and Happy Holidays! 

    So we were able to finally replace our 35 year old boilers in the duplex we live and own about a year ago. Our side recently had a filtration issue due to having Well water. I was able, with the help of a plumber buddy and multiple calls into the Viessmann Rhode Island tech number, to get that little filter found, out and cleaned of little debris. After putting everything back together a Network Connection issue popped up on the touch screen for a bit but I wound up shutting the unit off for 40-ish minutes and that seemed to clear it. The unit seems to be pushing too much heat though and nothing I do seems to stop it. Each apartment has the bedrooms down stores and a zone and then upstairs is everything else and a zone. I came home yesterday and it was 87 upstairs with the heat at 63. Nothing downstairs register wise on the unit seems lit or what not and I’m at a loss as it is sweltering, especially upstairs, and I don’t want to get into the touch screen options and screw something up. The manual is pretty useless to be honest and at best just seems to explain Fault messages in length and there are none for us. Anyone have any insight? No one is even open to ask until prob at least Tuesday and I hate the idea of wasting fuel while also being uncomfortably hot while my fiancé asks stupid questions over and over as I am already thinking on it and hitting a wall so far.

    What device -- or devices -- is supposed to be controlling the heat? Usually there is a thermostat or thermostats, and they usually control the zone controls, which in turn control the boiler. Can you describe the control strategy a bit more?

    Can you turn the boiler off at all without using the emergency switch? If so, how?
