I have an oil fired steam boiler with tankless coil water heater for hot water. I bought an electric water heater so I do not need to keep the boiler on year around and I do not want boiler to heat the water if I do not need heat for the house. How do I disconnect/disable the aquastat so the boiler will fire up only when I need heat for the house? Thanks

Post some picture so we can see what you have for controls. If you have a simple aquastat like a L4006a You can just shut the power off and disconnect the wires from the aquastat and power, it back up.
If you have a triple aquastat or something more complicated, we need to know what you have.0 -
Is potable water still connected to the tankless coil?0
