aquastat tripping at night

in THE MAIN WALL
i have a waste oil heater that in the middle of the night the dang thing locks out on high temp and the boiler doesnt come back on i replaced the swith already settin is at 210

    Sure it's not

    a manual reset?  If it's set to trip at 210, in my humble opinion it sure should be, if it isn't -- and there should be another aquastat at a much lower temperature to actually control the burner under "normal" conditions.
