Is it normal for the pressure cutoff on a gas steam heat unit to vary between
6psi and 10psi when the thermostat setting remains constant?

Gauge?
A steam system should never go over 1.5 to 2PSI and much less than 1PSI is better if the controls allow it.
Are you sure the gauge is working, does it read zero when cold?

As BobC says -- are you reasonably sure the gauge is working? They sometimes get tired.
Second question: what is the pressurestat set at? For any residential system -- indeed even for most really big systems -- it should be set to cut out at not more than 1.5 psi, and less is better.
Things to check: is the pressurestat working? Is the gauge working? Are the pigtails to the pressurestat and the gauge open?
You may need to add a separate low pressure (0 to 3 psi) gauge to the system -- but note that your insurance (and most codes) require that you keep the 0 to 30 psi gauge, too.Br. Jamie, osb
