Taco I series 2 way valve

2 questions on the setup of a taco I series 2 way valve with reset control. I have used the 3 way valves before, but the supplier doesn’t have the 3 way valves in stock, but does have a 2 way valve. Looking at the installation documentation, it shows a balancing valve installed to create a pressure differential. Question 1–In the drawing it looks like a they are showing a ball valve; I always thought globe valves were the proper valve to throttle flow. Question 2–how do you determine how open/closed that bypass valve should be? This is going to be used to temper 140* water from a buffer tank to supply outdoor reset temperature water for radiant staple up with heat transfer plates.
