    I like to think Starrett machinists levels we have aren't. They are adjustable.

    Correct.
    But, if you want a consistent pitch on something, you could intentionally unlevel the level, within the range available for the level (which probably isn't much).

    I've done that with a piece of wood and a shim taped to it when setting pitches outdoors.

    It was for backfilling gardens around the house after removing 30+ year old overgrown shrubbery, etc.
