My question is what is the difference between a one pipe header in a steam boiler or a two pipe header

    A header is the horizontal pipe that connects the risers coming out of the boiler and the main lines that eventually go to the radiators.

    To my understanding, and I'm not a pro, is there is only one header. There can be 1, 2 or more risers coming out of the boiler and that is generally a function of boiler size. More size equals more steam so you need additional risers to get the steam out.

    There can be one or more main lines supplying the radiators too. Same idea...more radiators equals more steam which may mean more mains to supply them.

    The boiler header for a one pipe system and a two pipe system are the same.

    What determines if a steam system is one pipe or two pipe is the #of pipes connected to the radiators.
