I use an ear, an eye, and sometimes a mirror. I've heard of people throwing something into the water to make it smell so you could use your nose.

Here's the Williamson manual for these boilers. The piping diagram is on page 11. It only shows one riser to the header, but the steam takeoff point is between the riser and the equalizer:
