They keep hot water from rising into the piping via gravity. In other words, the hot water stays in the tank until you open a hot water tap.
You can get special fittings or make one yourself via piping. To pipe a thermal trap, all you have to do is elbow down 18" or so, elbow over a foot or so and the elbow back up a few inches higher than where you began.
