i agree with the person that said only if it's in their way. that's all that matters. the only things they don't chew is harder metals or good stone
chances are they wont chew it. bore a hole for the mouse to go through near framing penetrations - they can fit in a hole the size of a dime, but i'd say 1" to be safe. peace of mind is a good thing.

I have a job where it appears a mouse chomped on the pex, am I going nuts or do mice have as sweet spot for plastic? casued a little mess; water on the basement floor, etc. gary

Rodents in general
have to gnaw constantly to keep their teeth worn, lest they curl back through the roofs of their mouths and pierce their teeny-tiny little brains.....
Squirrels in particular will bite you if they think you are nuts.

I had my old van parked under the shed for a few months and found out that the chew through gas line too....right where it comes out of the tank !0 -
I don't know if this is an urban myth but several of my customers have expressed concern in the matter complaining that the mice will chew through the pipe for a source of water. I have always wondered if it's true.0 -
I worked on an HPD project a couple of years ago where the telecom guys who were running the wiring for the door chimes and buzzers were coating their junction boxes with butter. I thought the were too cheap to use dielectric grease and when I asked one of the mechanics they told me it was to get the rats and mice to eat through the wiring so that they could come back and do replacement work. We joked that they had the rats on payroll.0 -
Chipmunks
ate through my neighbors car and truck fuel lines this summer. Lots of gas squirts from modern high pressure fuel injection gaslines. Some of them run 45psi or more. Luckily the vehicles quit before a fire could start.

thirsty mice
Have had mice chew through my tube on three occasions in the past twenty years. Twice with PB; once with pex. It was NOT in their way. All three cases were non-barrier. I think they smelled water inside and went for it. Have not had a case with barrier tube: Maybe they don't like the tase. Had one of those holes that sprayed water on the underside of joists and subfloor for months before buckling floor tipped off owner something might be wrong. Very expensive and the suits were after me claiming faulty workmanship. I, however, had the piece of tube with teeth marks clear to see. The rodent's workmanship was outstanding.

I had a snake like that once. it was on a condensor, and the snake went across two terminals on capacitor. Customer couldn't understand why a/c wouldn't work.0 -
Once my wife complained there was no hot water. I opened up the cover on the electric HWH to find a very well done snake across the 240 terminals.0 -

Mice and Pex
The mouse that chewed on this Pex was just trying to get from one joist space to another while using the pipe as the highway. He (or she) started to chew the wood, but decided the Pex was softer.
