What do you mean by "expansion rate"? Are you referring to how long it would take water to freeze?

Water has the least volume at 39.2F and has a volume of about 0.01602 cubic feet per pound. 100# would occupy 1.602 cubic feet.

When heated to 180F, water has a volume of about 0.01651 cubic feet per pound. 100# would occupy about 1.651 cubic feet. So, between 39.2F and 180F, 100# of water has expanded by about 0.049 cubic feet or about 0.03%

As you see there is very little expansion, but such expansion is a virtually irresistable force--that's why hot water systems must have an expansion/compression tank.

The expansion rate is not linear, so for precise work at other temps you really need to consult tables.
