Dirty Glass Gage

The new boiler is probably making better, faster steam, which has flushed out some of the debris that has been laying in your system for years. Have you noticed that the heat was better, perhaps heating some rads that weren't doing well before? Dirty boiler water will surge, often hard enough to get up over the header and create the "hammer" that you describe. As stated above, a simple skimming of the boiler may be all that you need. Worst case scenario, a round of boiler cleaner like KEK or similar may be necessary.

    Dirty Glass Gage

We have steam heat. Last November we had a new boiler put in because our old one had a crack in it. We never had a problem with water hammer before. Towards the end of the heating season, we noticed some very loud water hammer. Also, the glass gage on the new boiler is filthy because of the filthy water that has been in it. I'm sure that something he did caused these problems, however, I'm reluctant to call him back because I don't believe he is as knowledgeable about steam heat as he claimed to be. What do you suggest I do?

The boiler may simply need to be skimmed again to remove contaminants in the boiler water. Give the installer a call and I am sure that he will be happy to help you.
