Steam pressure and zones

I know that the recommended settings for the steam are between .5 and 2PSI, max. I have had two plumbers tell me that, although that is true, the three mechanically operated zones we have at our church require the steam settings to be higher since the pressure drops when a zone is opened???
Is this right or should we stick with keeping pressure at the max of 2 PSI?

I do work on a church boiler with 2 zone valves that has 2 pressuretrols they are set for 1.5 and 5 lbs system works fine boiler is controled by tstats not tomers
