We have a Fire House with 12 to 15 men, most all trying to take a shower the same time (5 showers total) plus two laundry machines and a dishwasher

Water Maker on a Weil McLain 1178

I need some help, if we were to install a water maker (water to water) using a Weil McLain 1178 steam boiler where should the water be taken from and returned to.

Assuming you have no tankless openings and no optional tapping on the side of the front and rear sections, you're pretty much stuck. The return can be tied into the rear section either in the center drain tapping or the return tap. You don't have any large tappings on the front side of a standard front section. Howe much water do you need to make? Would an indirect do the job? You have several 1" tappings on the front that you could use for the supply side.

What is making the hot water now ? If the boiler is making it with a coil and the coil still produces hot water , I'd look into storage tanks , or aquaboosters . It's been a long time since I've installed a 78 and I can't remember the tappings but I do know trying to pull plugs out of cast iron steam boilers is a royal pain . I agree with Al that an indirect is the way to go , if you can get to good tappings in the boiler .

Wayne, call WM tech services and have them size a heater for you. heck, They'll even give you a piping arrangement. That's what they are there for, and they're good at it.
