... kind of looking at this from the wrong end. How many GPM do you need to heat, and what it the temp rise on the water? Realistically, you can probably heat about 30 GPM, but as mentioned above - lots of variables.

Steam calculation
We are considering adding an instantaneous hot water heater to produce domestic hot water which will be supplied with steam from our boiler plant.
Does anyone know the formula to calculate how many btu's are produced from a 3 inch steam pipe supplied with 8 pounds of steam pressure? If not, is there a reference guide that might have the information?
Any help is appreciated.

Not enough info....
The short answer is a LOT.
The specific answer depends on how much pressure you want at the other end of the pipe, how much noise you can stand, how far you are piping the steam, etc.
Can you tell us how much steam you need and we'll give you the ramifications of shoving it through a 3" hole?
Generally, you can get 400 #/hr (400,000 BTU/Hr) without any problems whatsoever, but you can get a lot more depending on the specifics.
Low pressure steam can get to 12,000 fpm without sound issues, and that would give you 5,000 #/hr, BUT that's 1.5 psi drop per 100 feet! If you are running a large distance, you will soon run low on pressure.
