If the safety valve on your boiler is passing steam, you need a professional immediately. Do not wait, call now.
As for thermostats, I'm partial to the simple Honeywell T87. The builtin adjustable anticipator lets you get that 2 to 3 cycles per hour.

What is the best kind of thermostat for single stage/single-pipe steam-heat? Why is a relief-valve blasting away when it has never done that before?

What relief valve is blasting away? Second, a lot of stats can work just fine to control a one pipe system-Honeywell round, etc...But what relief valve is blasting away-potentially more important at this point!0
