At the risk of giving a tip that everyone knows, here it is:
The last time I used pex tubing, I connected one end to the hot water on the tankless heater (a slop sink faucet will do) and purged the air from a valve installed at the other end of the tubing. Let it run a little to put some btu's into it. The tubing feels like butter to work with and is much more kink-resistant. Of course, use domestic water and not boiler water.
