New Crown Bermuda and piping

I have a two pipe system and am replacing my old Bryant with a Crown Bermuda BSI276. The piping required on the new boiler is similar to what's on the old Bryant. In the photo of the old setup the pipes coming from the boiler are 3",risers and header and then to 2" at the supply mains. In the piping schematic Crown calls for a 3" header. The risers are 2". My question is do I in fact need to increase that to a 3" header (or leave it all 2") and if I do need to increase it do I need to have that strictly on the horizontal of the header or do I increase it at the top of the risers? I have a couple of photos for you to see. Thanks ahead of time.

Another question
Another question is on the old setup the takeoffs are between the risers ( as seen in the photo), but in Crown's piping schematic they suggest that they should be outside the risers. Does it matter? Again, thanks
