What if you had an old vapor system like Moline Heat or similar that was intact except for a new boiler. Would you remove the old vacuum valve at the end of the main? And since the individual radiators are equipped with manual throttling valves, would you still fire the burner off a room stat, or just let it cycle on the vaporstat to keep steam ready all season and modulate it with the radiator valves?

I'd remove the vacuum vent valve, but not the condenser pipe or radiator near it. An open pipe will work, with the vaporstat.
If you run it all of the time, it will overheat on spring and fall days. Thermostat is preferred.
Longer run cycles are good, so a balance between the thermostat, and throttling back radiators in well insulated rooms to match the new load, is best.
Remember, keep the radiators open as much as possible, or the burner will short cycle, it won't see the load it was sized for.
