What do you guys like to use in garages?
1" foam, 2" foam, insul-tarp?

I think
1-1/2- 2" foam for the edge insulation is a must. This is your largest loss area. Finish siding trim detail can get weird, but you really need the edge insulated as best as possible.Foam in this location can be re-treated for termites and bugs, also.
In my area, considering our climate and issue with termites I am comfortable with InsulTarp under the slab. I'll trade some r value for the other piece of mind, flexability, and excellent vapor barrier protection it offers.
I have also seen details of edge and just a 4 foot perimiter band used on garage and shop slabs. This handles the largest two loss areas. The downward loss is tied directly to the conductivity of the soil below.

put 2" around the perimeter, 2 inch under, on a 4 car garage, what did it cost few hundred bucks well worth it.
Only one minor crack, propagating from an internal corner.

Insulation
I have had excellent luck with r-foil which must be very similar to insultarp.You can unroll it like a giant rug and not worry about having a flat surface. You can staple tubing to it and when you walk on it, it doesn;t crack if you haven't graded things out flat. The bottom line is that any money you spend here on insulation will come back to you ten fold. And definetly edge insulation is a must.
