Is it possible to read amperage draw on a circulator and arrive at a flow rate. Lots of variables, I know, but...what have you all done? What's the best method?

Yes!
Doing an amp draw test is one of two critical measurements to determine pump dynamics (flow).
Measuring the suction and discharge pressures on both sides of the pump are more revealing, but both combined will tell you just about all you need to know.
