Thanks again to the fine folks at Burnham for the delicious Amish lunch last week at Wetstock. Anybody have a favorite food? I voted for the buttered noodles! The guys at the other end of the table were slacking off and talking too much! Either that or they wouldn't give up their noodles.

Lets see, hmmmmmmmmmm.
OK, the chicken was great, the buttered noodles were great, the corn was great, the fresh bread was great, the green beans were good, the applesauce was good, I didn't have any mashed potatoes, didn't have any of the jello, didn't have the cherry pie, the home made ice cream was great, and the shoo fly pie was great.
Seems like I left a couple of things out, but I did not waddle away from the table hungry.
Shoo-Fly Pie
This is a Pennsylvania Dutch pie with a molasses and/or brown sugar filling. The name supposedly comes from having to shoo the flys away from this very sweet pie.
Traditional Shoo-fly Pie
Makes two 9-inch pies
Line two 9-inch pie pans with homemade crust and chill. (Or chill store-bought unbaked piecrusts.)
Bottom:
1 cup molasses
1 tsp. baking soda
1 cup warm water
Stir baking soda into warm water. Add molasses. Stir until foamy.
Crumbs:
2 cups flour
1/2 cup sugar
1/2 tsp. baking soda
1/4 to 1/3 cup butter
Mix flour, sugar and baking soda. Use pastry blender to cut shortening into flour mixture until it makes very fine crumbs.
Pour molasses mixture into chilled piecrusts. Sprinkle crumbs over the top. Bake in oven at 425 degrees F. for 10 minutes. Reduce heat to 350 degrees F. and bake until crust is browned and the filling is set, usually about 35 minutes.0 -

I'm sure I've missed a couple of things, feel free to correct me.
I was not a bit hungry as I waddled back to the bus.

Shoo Fly Pie is a traditional Pennsylvania Dutch dessert. Brown sugar, molasses, shortening, salt, and spices were all non-perishable ingredients that could survive the long ocean's crossing to America made by German immigrants. The pie's unusual name is said to be due to the fact that pies were traditionally set to cool on windowsills, and due to the sweet ingredients, the cook would constantly have to shoo the flies away.

By far the best pie out there...
espec. if it was made by Gramma.....
Who was Pa. Dutch, by the way...
Too bad I had to miss the going's on this past weekend..
But I have eaten there many times and the food is always very good!!!

The wife
will be happy to hear that. Haven't popped the top off the syrup yet, been kinda hectic since I've been home. However, tomorrow mornings breakfast will be sourdough waffles, link sausage, and either fried potatoes or grits.
