Replacing pipe in a one pipe system

I have an older home, 170+ yrs, in western NY with a one pipe steam system. The horizontal pipe runs in the basement are shot and need to be replaced. I finally found two contractors willing to do the job and they have radically different ways of approaching the problem. The first will replace the existing pipe w/black pipe and iron fittings with a few small design changes to the condensate returns and the manifold coming off the boiler. These are supposed to reduce the water hammer I now have. The second contractor has recommended what he calls a counterflow system which won't have any condensate return lines, just one larger diameter pipe pitched so that all condensate will drip back to the boiler. The second contractor also proposes to use copper rather than black pipe.
I've never seen copper in a steam system and don't know if its OK. Is it? Would there be any advantage to the copper system, or am I better off using black pipe. Also, if I go with black pipe why are ductile iron tees and elbows better than malleable ones.
I have hard well water, 70+ grains hardness, which is softened before going to the boiler. Is there anything which should be done to condition the water in addition to the softener to reduce corrosion in the pipes?
