I would stick with the 1 5/8 strut. What I found to work really well as well if you want to keep the pumps at a reasonable level for serviceability is to use 1 5/8" strut with 3/8" spring nuts, all thread, and clevis ( I think I am spelling it right) hangers. If you have a Fastenal by you they should have all the fittings. It would probably cost the same as cushion clamps and you won't have to get on a ladder to work on your pumps.

which size
I'm thinking about using some unistrut (anchored floor and ceiling, "free standing" not against a wall or backer panel) and cush-a-clamps to support a Taco 005 and a total of 10-20ft of 1.25" copper tubing and a dozen fittings.
Which size unistrut do you most often use? 1000 at 1 5/8 sq 12 guage green seems a bit overkill but is by far the most commonly available.

Sounds fine
I prefer the plated as it doesn't show scratches. Also the perforated is a bit lighter than solid backed.
I'd stick with the deeper 1-1/2" for better ridgity! 7/8" may be springy.
There is high tech stuff out there, also. I bought some sticks of aluminun once, also stainless and various special coatings and colors.
