What specific area of piping science are you referring too? Each device has its strong suit. What application are you considering?
I always use flanges to join dissimilar materials (IE: PVC to copper or steel) to avoid the differences in material contraction rates and leaks. Unions are used to join similar materials where break apart service may be required (water heaters, tankless coils, etc.)
