please tell me again why copper shouldn't be used on a steam system. I know it's not a good idea but I don't know why.

Mostly, It's in the hot joints on the supplies
The pipe and fittings go from 70° F. to over 200° F. in an instant. The solder joints can't take that expansion well, and start to leak.
Threaded pipe joints "flex" better with expansion.
Then there can be corrosion problems. Plating problems in the boiler. pH problems in the water. Mostly leaking problems, though.
