at the bottom are two types of tees - mono-flow and venturi. I see the physical difference, but what is the functional difference between the two?

Different designs to accomplish the same thing.Which is as we know to create a pressure drop and allow some flow to be diverted from the main stream!Another tee is the "Thrift" or "scoop" tee.
