I recently replaced two Carling burner motors. Both capacitors are dead. and the motor resistance values follow:

Carlin Spec (ohm)

motor one, orange to white is slightly out of spec. does anyone see a reason why I should not reuse these motors with new capacitors?

Replacing capacitors is always less expensive than replacing the entire motor. I see on problem with that .

After you make that expensive repair and you still have the same problem, What will you check next?
