The orifice just meters the amount of gas that is emitted. A gas at a given pressure through a hole of a given size results in a known rate of flow. The pulling it through the burner and pulling in air to mix it with is all up to the draft created by the heat from the burning gas making the products of combustion lighter and rising.
I really meant with my comments about soap and sealing where the orifices screw in to the manifold was that it wasn't your problem, they wouldn't be able to show you where it was supposedly leaking.0
