Rianni Hot Water Heater Not Holding Temp

I have an older Rianni Continnum water heater from 2015. Can’t recall the mode number but can get it. Anyway, the max temp is sets to is 120. I checked the box and the number 2 controller is flipped down, but the rest are up. Anyway, I want to leave it at its max of 120. I stays for a bit, but then randomly once a week or a few times, it’s like it trips and drops to 108. Well 108 to me is cold, and I want to keep it at 120. What is causing this issue, and/or, what can I do to keep it from resetting to the 108 temp? If the box was in my bathroom who’d care, but it’s in my basement and air enough, but the time I realize it or my wife does with her tub, we’re soaking snd have to dry off and run to the basement to flip it back up. Any thoughts would be super appreciated!!!
