Aquabalance Boiler- PLEASE help explain the offset curve settings

Hello all,
We have a Well Mclaine Aquabalance combi boiler with outdoor reset. Using to heat in high mass concrete, radiant hot water application. After contractor installed we ran last winter and overshot indoor temps all the time, always hot in house. This fall I have done some digging in the manual and discovered the OTC curves and offset curves. I tried just an OTC curve of 1 and 2, still overshot a little, but better then before.
I have it now set with Offset 68 settings and it appears to be way more comfy in the house now at Offset 68 / OTC curve 2 or 3.
I understand the OTC curves and settings other then the Offset?
What does using the Offset mean? What is the affect of setting an Offset 68 vs. Offset 70 for example?
