Aquastat Settings - Utica ACE-300WT

Have a Utica ACE-300WT with R8182D aquastat. Used primarily for heat as the DHW is from an electric hot water heater that is a fed from the boiler. During the winter months we basically have unlimited hot water. That being said what would you recommend as the best settings for the aqustat to conserve fuel. To me it seems like it runs to often when someone is taking a shower or even just doing dishes. When I checked it the other day it was set at 180/140/10. I adjusted the diff to 25 but not sure if I am seeing much of a difference. I don't trust the temp gauge on the boiler as when its done cycling after DHW use its at 180, seems like it should be 165 at most. Thanks
