Weil-Mclain V68 boiler

Intermittently my boiler trips out and I need to bleed it 2 or 3 times to get her running again. New aquastat in 2016, new flame sensor in 2017 and a new transformer in 2019.

V68 Boiler is an oil fired boiler that is over 25 years old. Annual maintenance is a must for that boiler. A new Aquastat is not a complete maintenance.
This sounds like you may have a fuel line leak that is letting air into the sealed fuel lines. you will need a vacuum gauge and a few oil line fittings to check the piping from the tank to the burner. This is assuming that you get air from the bleed port each time you "Bleed it 2 to 3 times".
look at this from beckett https://www.beckettcorp.com/support/tech-bulletins/successfully-locating-suction-line-leaks/
testing fuel lines was addressed several times on this site here is one of them https://www.beckettcorp.com/support/tech-bulletins/successfully-locating-suction-line-leaks/
